  3. Pour the peas and blended spinach water (or 550ml of water) and simmer for 5 minutes or until the peas are cooked.
  4. Blend the soup until smooth, mixing in the milk and seasoning with salt and pepper.
  5. Serve with fresh bread and optionally a ribbon of cream or yoghurt.

Using an immersion blender (or a stand blender, working in batches), carefully puree until very smooth. (For a thinner soup, add a little water.) METHOD. Add the oil and all the veggies, peas and herbs. Frozen spinach is affordable, easy to keep on hand, suitable for range of delicious dishes, and full of nutrition.
